Mini Yorkies from the Tasty Ski Company

We love this recipe at The Tasty Ski Company. It is the only dish that we served 5 years ago in our first chalet that we still serve today. It is an absolute beauty and a real favourite for all of our guests, where we serve it to all of our guests as a canape. The recipe is also very easy to make but does require some mini muffin trays.

Beef Fillet with Mini Yorkshire Puddings and a Horseradish Cream

(makes about 20)

125g plain flour
1/2 teaspoon salt
2 medium eggs, 1 egg yolk
150ml milk
150ml water
250g beef fillet
50g horseradish sauce
50g double cream
Chives

Method

Combine the flour and salt. Make a well and gradually whisk in the wet ingredients. Cling film the mixture and reserve in the fridge for 30 minutes.

Add a little oil to each mini muffin tray, place in oven at 200 degrees for 7 minutes.

Add the batter to the trays (if it doesn’t sizzle then oil isn’t hot enough). Place in the oven for about 15 minutes (until crisp on the outside and soft on the inside). Remove from the oven and reserve until ready to serve.

Season the fillet generously with salt. Heat a pan with vegetable oil until smoking hot then pan fry on each side until golden brown.

When ready to serve slice the beef fillet and place on top of the puddings.

Combine the cream and horseradish sauce and put a little dollop on top. Chop up the chives and sprinkle on top.
